Agaricus blazei fish maw and chicken thigh soup
Ingredients for 3-4 people:
30-40 wild yellow fish maws x 5-6 pieces Chicken legs x 3 pieces Agaricus blazei x 8-10 pieces Cordyceps flower x a small amount (20g)
Wolfberry x a small amount (a few dozen)
3-4 pieces of snow fungus, 4-5 pieces of Chinese yam, 4-5 pieces of Polygonatum odoratum, 3 pieces of candied dates, 2-3 pieces of ginger, salt to taste
Water x 2000ml
practice:
1. Soak the fish maw overnight (steam it for 15 minutes, then refrigerate it overnight in clean water)
2. Soak the Hericium erinaceus in clean water for 20 minutes, then wash it, dry it and soak it in clean water for another 5 minutes. Repeat this process twice to remove the bitter taste of the Hericium erinaceus and set aside.
3. Wash other ingredients with clean water and blanch the chicken legs for later use.
4. Put all the ingredients except yellow fish maw into the pot, cover the pot and bring to a boil. Once boiling, turn to medium-low heat/600-800 and cook for 1.5 hours. Then add the fish maw and cook for another half an hour.
PS: Agaricus blazei and Cordyceps flowers have a strong aroma, which helps increase immunity. This soup nourishes the spleen and stomach, warms the stomach and drives away the cold. It also doesn't require a whole chicken. You might as well give it a try during the epidemic.
